The secret to great cooking is understanding your ingredients and how to combine them to produce perfectly balanced flavours and textures – rather than slavishly following recipes. This course will help you to develop that understanding so that you can create delightful food, from snacks to dinner parties, using your own intuition and taste.
The day will cover a wide range of subjects, from exploring flavour combinations to structuring menus, through to creating individual dishes from an interesting selection of ingredients, with a strong focus on seasonal produce and wild foods.
Throughout the day we will also cover key techniques and how to handle particular foods – these would typically include knife skills, pastry and pasta making and cooking meat and fish. As an added twist, you will be responsible for producing you own lunch and dinner, using some of the new skills you have learned.
The course is an intimate event, with a maximum of six people, and is held in The Barn Your tutor is Ian, resident chef and proprietor, who brings you a heartfelt passion, interest in and knowledge of food, and in particular, bread.
